Today the cheese market in Edam was entirely dedicated to Jan Adriaenszn Leeghwater, the famous hydraulic engineer who was born in De Rijp 450 years ago. Thanks to his vision and craftsmanship, among other things, the Beemster was drained. The unique landscape thus created still forms the basis for the work of our cattle farmers and cheese makers today.
The cheese market celebrated Leeghwater with a special tribute. CONO Cheesemakers is celebrating this special moment with the introduction of an anniversary cheese: Leeghwater Prestige. A cheese that we made especially for his 450th year of birth and left to mature for no less than 450 days. Full of flavor, with the quality and craftsmanship that we as CONO Kaasmakers are proud of.
Leeghwater, with his reclamation works, windmills and ingenious water management, left behind a legacy that is still visible in our landscape every day. A landscape that forms the basis for the tastiest and fairest cheese.
Starting tomorrow, Leeghwater Prestige will be available in our store and from the end of next week available for our farm stores. This way you will not only taste the rich flavor of our cheese, but also a piece of history.
